Makes 4–6 servings, only 20 minutes from prep to plate. Ingredients: 1 lb ground beef ½ tsp salt 2 Tbsp ketchup 2 Tbsp mayonnaise 1 Tbsp olive oil 4 slices American cheese 28 dill pickle chips (that’s the bun!) 14 slices plum tomato 14 small lettuce leaves Directions: Form patties: Shape beef into 1½″ mini patties (about 14 total). Sprinkle with salt. Make “special sauce”: Stir ketchup + mayo in a small bowl. Cook patties: Heat olive oil in a skillet on medium. Cook patties ~2 min each side. After flipping, top each with a small piece of American cheese to melt. Assemble bites: Thread one patty onto a skewer, then stack with a pickle "bun," tomato slice, and lettuce.
